
First, a little history. Marseille bouillabaisse is more than just a fish soup, it’s a religion. An explosion of flavors and a tradition that goes back centuries. Although the basic recipe consisted of boiling fish and dipping bread in it, it has since evolved into many variations.
There’s even a bouillabaisse charter, designed to ensure that the recipe ‘s basic ingredients are respected, and to prevent any fish soup from being sold as bouillabaisse. These ingredients include fish such as whitefish, gallinette, st-pierre and monkfish.
