Savor a chichi fregi in L’Estaque overlooking the sea

In Marseille, certain treats tell the city’s story just as much as its monuments. Neither quite a beignet, nor really a churro, nor even a classic fairground chichi, the chichi fregi claims its own identity. Traditionally made with chickpea flour, it takes its Provençal name, which means “small piece of fried chickpea.” While the recipe has evolved over time, the spirit remains: a dough delicately scented with orange blossom, dipped in boiling oil, then generously dusted with sugar.
Today, we still enjoy it warm, facing the Mediterranean with a smile on our lips.
